Do you love cookies? Well, this recipe is going to change your life like it changed mine!!! (yes my life has gained almost 3KGs haha)⁠ IT IS SERIOUSLY THE BEST and you need to try it!
I am not a recipe maker, chef or baker by any means, but I wanted pretty cookies to photograph and I ended up creating these which I’ve made over 6 times in the last 2 weeks!

This recipe does not include butter (because I didn't have butter one day and found a butter-less recipe on Sugar And Charm which has forever converted me to a non-butter cookie maker)

I tweaked some things here and there but kept the main ingredients the same to keep its form and chewiness.

This is also one of the easiest baked desserts you could possibly make, so even if you've never baked before, I promise you, you CAN do this. I’ll try my best to explain the steps as detailed as possible.

RECIPE

Before you begin, pre-heat your oven to 175C (fan oven) and prepare a baking tray with a non-stick baking sheet on it.
This recipe makes between 8 and 12 cookies depending on how big you make them. I make 8.

 

 

STEP 1

In the first bowl, mix the dry ingredients together:

1 cup flour

1/4 cups cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon espresso powder

STEP 2

In a second bowl, mix the other ingredients together:

1/2 cup vegetable oil (I used ground nut oil but if you have a nut allergy please use veg oil instead) - any oil works.

3/4 cup soft brown sugar

1/4 cup white sugar

1 egg

1/2 teaspoon vanilla extract

Step 3

Once you have both bowls mixed properly (and separately). Start to mix them with each other by slowly adding the dry ingredients to the wet ones and mix them as you go until the cookie dough is formed (it will be oily but shouldn't be runny, you should be able to carry it in chunks without it sticking to the bowl. If its sticking too much then add a tiny bit of flour until its not sticking).

Step 4

For the chocolate chips, I usually buy baking chocolate bars and cut them into chunks. I find ready chocolate chips too small and don't have much flavor. Also, having bigger chunks makes them melt way nicer!! Cut the bars and put the chocolate chunks into the dough, add as much as you want! I usually use a quarter of a bar, sometimes half. I also tried adding some mini marshmallows in a few of them and oh my, they were SO delicious and chewy.

Step 5

Once you're done, scoop the portions (your future cookies) with an ice cream spoon (or normal spoon) and make sure you don’t roll them in perfect balls, leaving them uneven and imperfect results in those dreamy crinkles on top, if you make them into perfectly rolled balls they will have a flat surface.
The size is up to you, I make mine the same size as an ice cream scoop and put them on the tray with baking paper (leave it in a ball form, it will melt and flatten out on its own in the oven, so you don’t need to press it flat) - Leave around 5 cm between each one so they have space to flatten out.

Step 6

This is VERY crucial. Put your cookies in the oven and set your timer for 12 minutes. Not any minute less or more. Once they’re done, take them out, sprinkle a little bit of sea salt on top then let them cool for 15 minutes. Then you can ENJOY!

Tips

  • Any oil works with this recipe, I prefer ground nut oil because it felt less oily to the touch than vegetable oil. BUT, if you have nut allergy, avoid it as it contains peanuts.

  • If you want to save some of the dough for later, you can roll them in balls and pop them in the freezer. When you take them out you can put them straight in the oven. They actually taste much nicer after being frozen for 90+ minutes.

  • If you want to make normal chocolate chip cookies without the cocoa powder, substitute the cocoa amount (1/4 cups) with flour instead, so you end up having 1 1/4 cups flour in total and no cocoa.

  • You can literally add whatever you want to this cookie mix like sprinkles, marshmallows or even toffee! Add them at the stage of adding the chocolate chunks.

  • Cups, tablespoons and teaspoons are measuring utensils that you can easily find online. Google ‘‘measuring cups and spoons set’’.
